Basic Banana Muffin

Basic Banana Muffins

makes 12 muffin sized or 20 fairy cake sized

 

250 g (8oz) SR Flour

125g (4oz) caster sugar

50g (2oz) butter

1 ripe banana about 150g (5oz) before peeling or near enough

2 eggs

4 tablespoons natural yoghurt

1/2 tsp baking powder

 

Set the oven to 200C  400F  Gas 6

 

Seperate paper muffin cases and put one in each hole in muffin tin

 

Put the flour and sugar  and baking powder in the mixing bowl and mix evenly

 

Melt the butter in saucepan or microwave

 

Peel then mash banana on a plate with a fork

 

Add the melted butter, banana, eggs and yoghurt to the flour mixture

 

Mix together lightly with a fork until only just mixed and no obvious flour showing

 

Spoon quickly into muffin cases and bake for approx 15 mins until well risen and top cracked and golden brown

 

Eat hot or cold - freezes well
